To balance the softness, try reducing the baking time or temperature slightly. Adding a bit more cream of tartar might help too. 😋🍪
 
I think substituting some of the granulated sugar with brown sugar adds moisture. Plus, rolling them in cinnamon sugar before baking makes them extra soft! 🍪
