Filet Mignon Recipe

Ingredients:

  • 2 filet mignon steaks (about 1 1/2 inches thick)

Instructions:

1. Prepare the Steaks:

- Season both sides generously with salt and pepper.

2. Sear the Steaks:
- Heat the olive oil in a cast-iron skillet over medium-high heat until it’s just starting to smoke.
- Place the steaks in the skillet and sear for 3-4 minutes on each side until a brown crust forms.

3. Add Butter and Aromatics:
- Lower the heat to medium, add the butter, garlic, and rosemary or thyme to the skillet.
- Once the butter has melted, tilt the skillet slightly and spoon the butter over the steaks repeatedly for about 1-2 minutes.

4. Finish Cooking:
- For medium-rare, transfer the skillet to a preheated oven at 400°F (200°C) and cook for an additional 5-7 minutes.
- Use a meat thermometer to check the internal temperature: 130°F (54°C) for medium-rare.

5. Rest the Steaks:
- Remove the steaks from the skillet and let them rest on a cutting board for 5-10 minutes. This helps the juices redistribute and keeps the steaks tender.

6. Serve:
