If you’re in the mood for something light, tangy, and easy to prepare then you have got to try out the Fish Tacos with Berry Salsa. This dish incorporates the crispy and moist feeling you get from well grilled fish which is accompanied by a tangy and sweet mixed berry salsa and presents the different taste sensations on your tongue in a show. Ideal for a quick weeknight dinner or a casual get-together with friends, this recipe brings together the best of both worlds: Wholesome ingredients, exotic flavours of summer, all in a dish that can be prepared in 30 minutes.

- 1 cup chopped peeled jicama
- 1 cup chopped fresh strawberries
- 1 seeded and finely chopped jalapeno pepper
- 3 tablespoons minced fresh cilantro
- 2 tablespoons lime juice
- 1/2 teaspoon salt, divided
- 4 tilapia fillets (6 ounces each)
- 1/4 teaspoon pepper
- 8 corn tortillas (6 inches)
- 1/2 cup crumbled Cotija cheese
Directions:
- Preheat the broiler.
- For the salsa, mix the jicama, strawberries, jalapeno, cilantro, lime juice, and 1/4 teaspoon salt in a small bowl.
- Place the tilapia fillets on a foil-lined baking pan, and sprinkle with pepper and the remaining salt.
- Broil the fish 4-6 inches from the heat for 5-7 minutes, until it flakes easily with a fork.
Don't forget to serve the fish in tortillas topped with salsa and Cotija cheese, Enjoy!
