Ingredients:


  • 1 cup chopped peeled jicama
  • 1 cup chopped fresh strawberries
  • 1 seeded and finely chopped jalapeno pepper
  • 3 tablespoons minced fresh cilantro
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt, divided
  • 4 tilapia fillets (6 ounces each)
  • 1/4 teaspoon pepper
  • 8 corn tortillas (6 inches)
  • 1/2 cup crumbled Cotija cheese

Directions:

  1. Preheat the broiler.
  2. For the salsa, mix the jicama, strawberries, jalapeno, cilantro, lime juice, and 1/4 teaspoon salt in a small bowl.
  3. Place the tilapia fillets on a foil-lined baking pan, and sprinkle with pepper and the remaining salt.
  4. Broil the fish 4-6 inches from the heat for 5-7 minutes, until it flakes easily with a fork.

Don't forget to serve the fish in tortillas topped with salsa and Cotija cheese, Enjoy!
