Ingredients:​

  • 4 grouper fillets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1/2 cup white wine (optional)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon capers, drained
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese (optional)

Instructions:​

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Fish:
    • Season the grouper fillets with salt and pepper. Drizzle with 1 tablespoon of olive oil and set aside.
  3. Prepare the Sauce:
    • Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
    • Add the chopped onion and cook until softened, about 5 minutes.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
    • Stir in the diced tomatoes (with their juices), white wine (if using), dried oregano, dried basil, and red pepper flakes (if using).
    • Bring the mixture to a simmer and cook for about 10 minutes, allowing the flavors to meld together.
    • Stir in the capers and half of the chopped parsley.
  4. Bake the Fish:
    • Place the seasoned grouper fillets in a baking dish.
    • Pour the chunky tomato sauce over the fillets, making sure they are well-coated.
    • Bake in the preheated oven for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
  5. Serve:
    • Remove the baked grouper from the oven.
    • Sprinkle with the remaining fresh parsley and grated Parmesan cheese, if using.
    • Serve immediately, with your choice of sides such as pasta, rice, or a fresh green salad.

Tips:​

  • For an extra burst of flavor, you can add a splash of balsamic vinegar to the tomato sauce.
  • If you prefer a smoother sauce, you can blend the tomato mixture before adding it to the fish.
