Ingredients:
  • 1 cup cooked and mashed butternut squash
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • Optional: Powdered sugar for dusting

Instructions:
  1. Preheat your oven to 350ยฐF (175ยฐC) and grease a donut pan with cooking spray.
  2. In a large mixing bowl, combine the mashed butternut squash, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  5. Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full.
  6. Bake the butternut donuts in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove the donuts from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  8. Once the donuts are completely cooled, dust them with powdered sugar, if desired.
