- 1 lb (about 450g) medium shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 1/4 cup water
- 2 cups mixed vegetables (such as bell peppers, snap peas, carrots, and broccoli)
- Cooked rice or noodles, for serving
- Sesame seeds and chopped green onions, for garnish (optional)
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, cornstarch, and water to make the sauce. Set aside.
- Heat olive oil in a large skillet or wok over medium-high heat. Add minced garlic and cook for about 30 seconds, or until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes on each side, until pink and cooked through. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the mixed vegetables and stir-fry for 3-4 minutes, or until they are crisp-tender.
- Return the cooked shrimp to the skillet and pour the sauce over the shrimp and vegetables. Stir well to coat everything evenly.
- Cook for another 1-2 minutes, or until the sauce has thickened slightly and everything is heated through.
- Serve the Honey Garlic Shrimp Stir Fry hot over cooked rice or noodles. Garnish with sesame seeds and chopped green onions, if desired.
