Ingredients:

  • 1 lb (about 450g) medium shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 1/4 cup water
  • 2 cups mixed vegetables (such as bell peppers, snap peas, carrots, and broccoli)
  • Cooked rice or noodles, for serving
  • Sesame seeds and chopped green onions, for garnish (optional)
Instructions:

  1. In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, cornstarch, and water to make the sauce. Set aside.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add minced garlic and cook for about 30 seconds, or until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes on each side, until pink and cooked through. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the mixed vegetables and stir-fry for 3-4 minutes, or until they are crisp-tender.
  5. Return the cooked shrimp to the skillet and pour the sauce over the shrimp and vegetables. Stir well to coat everything evenly.
  6. Cook for another 1-2 minutes, or until the sauce has thickened slightly and everything is heated through.
  7. Serve the Honey Garlic Shrimp Stir Fry hot over cooked rice or noodles. Garnish with sesame seeds and chopped green onions, if desired.
