Hummingbird Cake Recipe

  • 1 teaspoon ground cinnamon

  • 3 large eggs, beaten
  • 1 cup vegetable oil
  • 1 1/2 teaspoons vanilla extract
  • 1 (8-ounce) can crushed pineapple, undrained
  • 1 cup chopped pecans
  • 2 cups mashed ripe bananas (about 4 bananas)

For the Cream Cheese Frosting:​

  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 (16-ounce) package powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans (optional, for garnish)

Instructions:​

  1. Preheat and Prepare Pans:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour three 9-inch round cake pans or line them with parchment paper.
  2. Mix Dry Ingredients:
    • In a large bowl, combine the flour, sugar, baking soda, cinnamon, and salt.
  3. Combine Wet Ingredients:
    • In another bowl, mix the beaten eggs, vegetable oil, and vanilla extract.
    • Stir in the crushed pineapple, including the juice, chopped pecans, and mashed bananas.
  4. Combine and Mix:

  5. Bake:
    • Divide the batter evenly among the prepared cake pans.
    • Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
    • Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  6. Prepare the Frosting:
    • In a large bowl, beat the softened cream cheese and butter until smooth.
    • Gradually add the powdered sugar, beating until light and fluffy.
