Italian Cloud Eggs

Light, airy, and bursting with flavor, they're perfect for a leisurely weekend brunch or a special breakfast occasion.


Ingredients:
- 4 large eggs
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped fresh basil leaves
- Salt and pepper to taste
- Chopped sun-dried tomatoes, sliced olives, cooked crumbled sausage

Instructions:
1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. Separate the egg whites from the yolks, being careful not to break the yolks. Place the egg whites in a large mixing bowl and the yolks in individual small bowls.
3. Using a hand mixer or stand mixer, beat the egg whites on high speed until stiff peaks form. This will take about 3-4 minutes.
4. Gently fold in the grated Parmesan cheese, chopped basil leaves, and a pinch of salt and pepper into the whipped egg whites until well combined.
5. Spoon the whipped egg white mixture into 4 mounds on the prepared baking sheet, forming slight indentations in the centers of each mound with the back of a spoon.
6. Carefully slide a yolk into each indentation in the egg white clouds.
7. Optional: Sprinkle toppings such as chopped sun-dried tomatoes, sliced olives, or cooked crumbled sausage over the egg whites.
8. Bake in the preheated oven for 12-14 minutes, or until the egg whites are golden brown and the yolks are set to your desired consistency.
9. Remove from the oven and serve immediately, garnished with additional chopped basil leaves if desired.
10. Enjoy your Italian Cloud Eggs as a delightful and flavorful breakfast or brunch treat!
