Kappa Maki is a simple yet delightful sushi roll that highlights the crispness of fresh cucumber. Perfect for sushi beginners or anyone looking for a refreshing bite, this classic roll combines seasoned rice with crunchy cucumber, all wrapped in a seaweed sheet. It's light, tasty, and makes for a great appetizer or side dish.
**Ingredients**:
- 1 cup sushi rice, cooked and seasoned with vinegar
- 1 cucumber, peeled and cut into thin strips
- 4 sheets of nori (seaweed)
- Soy sauce, for dipping
- Pickled ginger and wasabi (optional)
**Instructions**:
1. Place a sheet of nori on a bamboo sushi mat, shiny side down.
2. Spread a thin layer of sushi rice over the nori, leaving a small border at the top edge.
3. Arrange cucumber strips in a line across the middle of the rice.
4. Using the sushi mat, carefully roll the nori and rice over the cucumber, pressing gently to form a tight roll.
