- 4 green cabbage leaves, thinly sliced
- Place flour in a shallow bowl. Beat the egg with a splash of water in another shallow bowl. Place panko breadcrumbs in a deep dish.
- Gently pound each pork cutlet, then season with salt and pepper on both sides.
- Coat each cutlet in flour, then dip in the egg mixture, and coat with panko breadcrumbs.
- Heat oil in a skillet over medium heat. Fry 2 cutlets until golden brown, about 3 minutes per side. Transfer to a paper towel-lined plate and sprinkle with salt. Repeat with remaining cutlets.
- Spread butter on each slice of bread. Top 4 slices with tonkatsu sauce, cabbage, and a fried pork cutlet. Drizzle more tonkatsu sauce over the cutlets. Top with remaining bread slices.
- Place a platter or tray on top of the sandwiches and weigh it down with heavy items for 5 minutes.
