Kimchi Quesadillas Recipe

  • Flour tortillas
  • Kimchi (store-bought or homemade)
  • Shredded cheese (cheddar, Monterey Jack, or a blend)
  • Optional: Cooked protein (such as shredded chicken, pork, or tofu)

  1. Heat a non-stick skillet over medium heat.
  2. Place a flour tortilla in the skillet and sprinkle a generous amount of shredded cheese over half of the tortilla.
  3. Add a layer of kimchi on top of the cheese, spreading it evenly.
  4. If desired, add a layer of cooked protein on top of the kimchi.
  5. Fold the tortilla in half to cover the filling, creating a half-moon shape.
  6. Cook the quesadilla for 2-3 minutes on each side, or until the tortilla is crispy and golden brown and the cheese is melted.
  7. Repeat with the remaining tortillas and filling ingredients.
