Ingredients:
- 1 lb beef sirloin, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey or brown sugar
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 2 tablespoons vegetable oil
- 1 onion, thinly sliced
- 2 bell peppers, thinly sliced
- 1 cup sliced mushrooms (such as shiitake or button mushrooms)
- 2 cups broccoli florets
- Cooked rice, for serving
- Sesame seeds and sliced green onions, for garnish
- In a bowl, whisk together the soy sauce, sesame oil, honey or brown sugar, minced garlic, and grated ginger to make the marinade.
- Place the thinly sliced beef in a shallow dish and pour the marinade over it. Toss to coat the beef evenly. Let the beef marinate for at least 15-20 minutes to absorb the flavors.
- Heat a tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry for 2-3 minutes, or until browned and cooked through. Remove the beef from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil. Add the sliced onion, bell peppers, mushrooms, and broccoli florets. Stir-fry for 4-5 minutes, or until the vegetables are tender-crisp.
- Return the cooked beef to the skillet and toss with the vegetables to combine.
- Serve the Korean Beef and Vegetable Stir-Fry hot over cooked rice.
- Garnish with sesame seeds and sliced green onions for an extra pop of flavor and texture.
- Enjoy this delicious stir-fry as a quick and satisfying meal any day of the week!
