Good day everyone! Just tried this amazing lamb chops recipe and it turned out fantastic! 
Super juicy and packed with flavor thanks to the garlic and thyme butter. Definitely a must-try if you're looking for an easy yet impressive dish. 
Lamb Chops Recipe
Ingredients
- 5 lamb loin chops
- Salt and black pepper
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 teaspoon fresh thyme, chopped
Instructions
- Preparation: Remove the lamb loin chops from the fridge 20-30 minutes before cooking to bring them to room temperature. Place the chops on a paper towel-lined cutting board and pat them dry with additional paper towels. Season generously with salt and black pepper.
- Searing the Fat: Heat a dry 12-inch cast iron skillet over medium-high heat. Stand the chops on their narrow fat side in the skillet. Use tongs to keep them balanced and press them down to render the fat and achieve a crisp, brown crust. This should take about 5 minutes.
- Cooking the Sides: Once the fat has melted into the pan, lay the chops flat on one of their sides. Cook for 3 minutes until browned, then flip and cook the other side.
- Adding Flavors: Reduce the heat to medium-low. Using a spoon, pour off most of the rendered lamb fat from the skillet. Add 2 tablespoons of butter, along with the minced garlic and chopped thyme.
- Basting: Stir the butter mixture until it starts to foam. Spoon the foaming butter over the lamb chops for about a minute to infuse the flavors.
- Serving: Transfer the lamb chops to a serving dish and pour the butter sauce over the top. Enjoy your delicious lamb chops!
