Here's a recipe for Lechon Kawali, a Filipino crispy pork belly dish:

Ingredients:

  • 2 pounds pork belly, skin on, cut into 2-inch cubes
  • 6 cloves garlic, crushed
  • 2 bay leaves
  • 1 tablespoon salt
  • 1 teaspoon whole peppercorns
  • Water for boiling
  • Cooking oil for deep-frying
Instructions:

  1. In a large pot, combine the pork belly cubes, crushed garlic, bay leaves, salt, and whole peppercorns.
  2. Add enough water to cover the pork belly, then bring the water to a boil over high heat.
  3. Reduce the heat to low and simmer the pork belly for about 45 minutes to 1 hour, or until the meat is tender.

  5. Heat cooking oil in a deep fryer or a large pot to 350°F (175°C).
  6. Carefully lower the cooked pork belly cubes into the hot oil and deep-fry until the skin is golden and crispy, about 8-10 minutes. Be cautious as the oil may splatter.
  7. Once the pork belly is crispy and golden brown, remove it from the oil and let it drain on a wire rack or paper towels to remove excess oil.
  8. Serve the crispy Lechon Kawali hot with your favorite dipping sauce or side dishes such as steamed rice and vinegar dipping sauce with chopped onions and chili peppers.
