  • 8 oz (225g) lo mein noodles or spaghetti
  • 2 tablespoons vegetable oil, divided
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 small onion, thinly sliced
  • 1 cup mixed vegetables (such as bell peppers, carrots, and snow peas)
  • 1 cup sliced mushrooms
  • 2 cups cooked protein (such as chicken, shrimp, or tofu)
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (optional, for garnish)
Instructions:
  1. Cook the lo mein noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the garlic and ginger, and cook for 30 seconds until fragrant.
  3. Add the sliced onion, mixed vegetables, and mushrooms to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. Push the vegetables to one side of the skillet and add the remaining tablespoon of vegetable oil. Add the cooked protein to the empty side of the skillet and cook for 2-3 minutes until heated through.
  5. Combine the vegetables and protein in the skillet. Add the cooked noodles.
  6. In a small bowl, mix together the soy sauce, oyster sauce, hoisin sauce, and sesame oil. Pour the sauce over the noodles and toss everything together until well coated.
  7. Cook for an additional 2-3 minutes until everything is heated through.
  8. Remove from heat and garnish with chopped green onions and sesame seeds, if desired.

    Serve hot and enjoy your homemade lo mein!
