• 2 ripe mangoes, peeled and diced
• 400ml coconut milk
• 3 tbsp sugar
• 1 packet (7g) unflavored gelatin
• 1/4 cup hot water
• Fresh mint for garnish

Procedure:

1. Puree the mangoes in a blender until smooth.
2. In a saucepan, heat the coconut milk and sugar over medium heat until the sugar dissolves. Do not boil.
3. Dissolve the gelatin in hot water and let it sit for a minute.
4. Stir the gelatin mixture into the coconut milk mixture until well combined.
5. Remove from heat and let it cool slightly.
6. Stir in the mango puree.
7. Pour the mixture into serving cups and refrigerate for at least 2 hours until set.
8. Garnish with fresh mint before serving.
