To make your supper more interesting, try this recipe for Mexican coleslaw! It gives your tacos the perfect amount of crunch and flavor. Your taste senses will quiver over this delectable dish!

Ingredients
* 1 small red cabbage or about 8 cups pre-shredded cabbage
* 2 cups shredded carrots
* 2 bunches scallions trimmed and sliced
* ½ cup extra virgin olive oil
* 1 juicy lime zested and juiced
* 2 tablespoons sherry wine vinegar
* 1 large garlic clove minced
* 1 tablespoon grainy mustard
* 1 tablespoon chili powder
* 1 teaspoon chipotle powder (moderately spicy) or smoked paprika (not spicy)
* 1 teaspoon honey
* Handful of fresh cilantro leaves optional
* Salt to taste
Guidelines
1. Using a sharp knife or the chosen mandolin, finely slice the cabbage after cutting it into quarters. In a large bowl, combine the cabbage, carrots, onions, and optional cilantro.
2. Olive oil, lime zest and juice, vinegar, garlic, mustard, chipotle powder or smoked paprika, chili powder, honey, and salt to taste should all be combined in a different bowl.
3. As little cabbages vary in size, begin by adding three-quarters of the dressing to the mixture of cabbages. Discard. Add the remaining dressing to the slaw if it appears dry. If you have 20 minutes, let the marinade!
