- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 2 tablespoons piri piri seasoning (store-bought or homemade)
- Salt and pepper, to taste
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 cloves garlic, minced
- 1 lemon, sliced
- Fresh parsley, chopped, for garnish
- Cooked rice or crusty bread, for serving
- Preheat your oven to 200°C (about 400°F).
- Pat the chicken thighs dry with paper towels and season them generously with salt, pepper, and half of the piri piri seasoning.
- Heat the olive oil in a large oven-safe skillet or cast-iron pan over medium-high heat. Once hot, add the seasoned chicken thighs to the pan, skin side down. Cook for 5-6 minutes, or until the skin is golden brown and crispy. Flip the chicken thighs over and cook for an additional 2-3 minutes on the other side. Remove the chicken thighs from the pan and set them aside on a plate.
- In the same skillet, add the sliced bell peppers, red onion, and minced garlic. Cook for 3-4 minutes, or until the vegetables are slightly softened.
- Return the seared chicken thighs to the skillet, arranging them on top of the vegetables.
- Sprinkle the remaining piri piri seasoning over the chicken and vegetables, ensuring they are evenly coated.
- Place the lemon slices on top of the chicken thighs.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (about 165°F).
- Once cooked, remove the skillet from the oven and let it rest for a few minutes.
