Hey everyone! I wanted to share one of my favorite weeknight recipesā€”Pan Baked Chicken. Itā€™s super simple, flavorful, and doesnā€™t require a ton of cleanup. I make it all the time when Iā€™m craving something hearty but donā€™t feel like spending hours in the kitchen.

Ingredients:​

  • 4 bone-in, skin-on chicken thighs (or breasts, if you prefer!)
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 lemon (sliced into rounds)
  • 2 cups mixed veggies (I usually go with baby potatoes, carrots, and green beans)

Instructions:​

  1. Preheat your oven to 400Ā°F (200Ā°C).
  2. In a small bowl, mix the paprika, garlic powder, onion powder, thyme, salt, and pepper.
  3. Rub the chicken with olive oil and season generously with the spice mix.
  4. Heat a cast-iron skillet or oven-safe pan over medium heat. Sear the chicken skin-side down until golden and crispy (about 3ā€“4 minutes).
  5. Flip the chicken, add the veggies to the pan, and toss them with a little olive oil, salt, and pepper.
  6. Lay lemon slices on top of the chicken and veggies.
  7. Transfer the pan to the oven and bake for 25ā€“30 minutes, or until the chicken reaches an internal temperature of 165Ā°F (75Ā°C).
  8. Let it rest for 5 minutes before serving.
