Hey everyone! I wanted to share one of my favorite weeknight recipesāPan Baked Chicken. Itās super simple, flavorful, and doesnāt require a ton of cleanup. I make it all the time when Iām craving something hearty but donāt feel like spending hours in the kitchen.

Ingredients:
- 4 bone-in, skin-on chicken thighs (or breasts, if you prefer!)
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 lemon (sliced into rounds)
- 2 cups mixed veggies (I usually go with baby potatoes, carrots, and green beans)
Instructions:
- Preheat your oven to 400Ā°F (200Ā°C).
- In a small bowl, mix the paprika, garlic powder, onion powder, thyme, salt, and pepper.
- Rub the chicken with olive oil and season generously with the spice mix.
- Heat a cast-iron skillet or oven-safe pan over medium heat. Sear the chicken skin-side down until golden and crispy (about 3ā4 minutes).
- Flip the chicken, add the veggies to the pan, and toss them with a little olive oil, salt, and pepper.
- Lay lemon slices on top of the chicken and veggies.
- Transfer the pan to the oven and bake for 25ā30 minutes, or until the chicken reaches an internal temperature of 165Ā°F (75Ā°C).
- Let it rest for 5 minutes before serving.
