Peanut Butter Swirl Brownies Recipe
Ingredients:
- 6 oz semisweet chocolate chips
- 8 tbsp (4 oz) unsalted butter
- 2 large eggs
- 1/2 cup granulated sugar
- 1/2 cup dark brown sugar
- 1 tbsp instant espresso coffee powder
- 1 tsp vanilla extract
- 2/3 cup all-purpose flour
- 2/3 cup unsweetened cocoa powder
- 1/2 tsp salt
- 1/4 tsp baking powder
- 1/2 cup smooth peanut butter
- 2 tbsp powdered sugar
- Preheat & Prep:
- Preheat your oven to 350˚F (175˚C).
- Line an 8-inch square baking dish with parchment paper and set aside.
- Melt Chocolate & Butter:
- In a heat-proof bowl, combine the chocolate chips and butter.
- Place over a pot of simmering water, ensuring the bowl doesn't touch the water. Stir until melted and smooth, then remove from heat.
- Make the Batter:
- In a large bowl, whisk together the eggs, granulated sugar, dark brown sugar, espresso powder, and vanilla extract.
- Add the flour, cocoa powder, salt, and baking powder.
- Pour in the melted chocolate and butter mixture. Stir until well combined. (The batter will be thick—don’t worry, that's perfect!)
- Prepare for Baking:
- Press the brownie batter into the prepared baking dish, spreading it evenly.
- Peanut Butter Swirl:
- Microwave the peanut butter for about 30 seconds until it’s soft and drizzly.
- Stir in the powdered sugar.
- Drizzle the peanut butter mixture over the brownie batter.
- Using a butter knife, gently swirl the peanut butter into the batter, creating a marbled effect. Be careful not to overmix.
- Bake:
- Bake for about 35 minutes, or until a toothpick inserted into the center comes out mostly clean (a little peanut butter sticking is okay).
- Transfer to a wire rack to cool completely.
- Cool & Slice:
- Allow the brownies to cool to room temperature before cutting.
- For cleaner slices, chill the brownies in the freezer for a few minutes to firm up before cutting.
