Hey everyone, I want to introduce you to a flavorful delight: Pernil! 🍖 This Puerto Rican-style roast pork is a true crowd-pleaser, with its tender meat and aromatic spices. Get ready to embark on a culinary journey full of savory goodness! Let's dive into this delicious recipe together!

Ingredients:
  • 4-5 lbs pork shoulder (also known as pork butt)

  • 6 garlic cloves, minced
  • 2 tablespoons dried oregano
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1/4 cup olive oil
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 1/4 cup white vinegar
  • 1/4 cup fresh cilantro, chopped (optional)
  • 1 onion, sliced (optional)
Instructions:
  1. Preheat your oven to 325°F (160°C).
  2. In a small bowl, mix together the minced garlic, dried oregano, ground cumin, paprika, salt, pepper, olive oil, orange juice, lime juice, and white vinegar to make the marinade.
  3. Place the pork shoulder in a large roasting pan or baking dish.
  4. Use a knife to make several deep cuts or slashes all over the pork shoulder. This will allow the marinade to penetrate the meat better.
  5. Rub the marinade all over the pork shoulder, making sure to get it into the cuts you made.
  6. If desired, scatter the sliced onion and chopped cilantro over the pork shoulder.
  7. Cover the roasting pan or baking dish with aluminum foil and let the pork marinate in the refrigerator for at least 4 hours, or preferably overnight.
  8. Once marinated, remove the pork from the refrigerator and let it come to room temperature for about 30 minutes.
  9. Place the covered roasting pan or baking dish in the preheated oven and roast the pork for about 3-4 hours, or until it is very tender and easily shreds with a fork.
  10. About halfway through the cooking time, uncover the pork to allow the skin to crisp up and become golden brown.
  11. Once the pork is done, remove it from the oven and let it rest for about 10-15 minutes before slicing or shredding.
  12. Serve the Puerto Rican-style roast pork hot with your favorite side dishes, such as rice and beans, tostones (fried plantains), or a simple salad.
