  • 1 pound dried pinto beans, rinsed

  • 4 garlic cloves, minced
  • 1 jalapeño, chopped (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 6 cups water or vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh cilantro for garnish

  1. Soak the pinto beans overnight, then drain and rinse them.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped onion and garlic, and sauté until the onion is translucent.
  4. If using, add the chopped jalapeño and cook for another minute.
  5. Stir in the ground cumin, smoked paprika, chili powder, and dried oregano. Cook for about a minute until fragrant.
  6. Add the soaked pinto beans, water or vegetable broth, and the bay leaf.
  7. Bring to a boil, then reduce the heat and simmer for about 1.5 to 2 hours, or until the beans are tender.
  8. Season with salt and pepper to taste.
  9. Remove the bay leaf and garnish with fresh cilantro before serving.
