- 1 lb pork shoulder or pork loin, diced into small cubes

- 2 cups roasted and peeled green chilies, chopped (such as Anaheim or poblano)
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp ground cumin
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Chopped fresh cilantro, for garnish
- Lime wedges, for serving
- Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
- Add the diced pork to the pot and cook until browned on all sides, about 5-7 minutes.
- Add the chopped onion and minced garlic to the pot with the pork. Cook until the onion is softened, about 3-4 minutes.
- Stir in the chopped green chilies, ground cumin, and dried oregano. Cook for another 2 minutes, stirring frequently.
- Pour in the chicken broth and diced tomatoes (with their juices). Bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for 1 to 1.5 hours, stirring occasionally, until the pork is tender and the flavors have melded together.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped fresh cilantro and lime wedges on the side.
