Hi all! I just baked this Raspberry Almond Crumb Cake and it’s fantastic! The combination of raspberries and almonds is just perfect. Super easy to make and delicious. Give it a try if you’re in the mood for something sweet!

- 1 cup all-purpose flour
- ½ cup granulated sugar
- 1 tsp baking powder
- ¼ tsp salt
- ½ cup milk
- 1 large egg
- ¼ cup unsalted butter, melted
- 1 cup fresh raspberries
- ¼ cup all-purpose flour (for topping)
- ¼ cup granulated sugar (for topping)
- ¼ cup sliced almonds
- 2 tbsp unsalted butter, melted (for topping)
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- In a bowl, mix together the flour, sugar, baking powder, and salt.
- Stir in the milk, egg, and melted butter until just combined.
- Gently fold in the fresh raspberries.
- Pour the batter into the prepared baking pan.
- For the crumb topping: In a small bowl, combine the flour, sugar, and sliced almonds. Add the melted butter and mix until crumbly.
- Sprinkle the crumb topping evenly over the batter.
- Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool before serving.
