This deliciously tangy candy eliminates the need for baking in the summer (or any time of the year) and is a great treat to share with friends and family. - 3 cups heavy cream
- 3/4 cup powdered sugar
- 2 teaspoons pure vanilla extract
- 12 oz mascarpone cheese
- 3 cups strongly brewed coffee
- 1/4 cup Grand Marnier (orange liqueur)
- 36 ladyfingers
- 1/2 cup raspberry jam
- 12 oz fresh raspberries
- Chocolate shavings, for garnish
Instructions:
- In a large bowl, use a hand mixer to beat together the heavy cream, powdered sugar, and vanilla until medium peaks form.
- In a separate medium bowl, combine the mascarpone cheese with about 1/4 cup of the whipped cream mixture. Stir until smooth, then gently fold in the remaining whipped cream.
- In a large glass measuring cup, mix together the strongly brewed coffee and Grand Marnier.
- Spread a thin layer of the whipped cream mixture in the bottom of a large trifle dish.
- Quickly dip each ladyfinger into the coffee mixture and arrange them in a single layer on top of the whipped cream in the dish.
- Spread about a third of the whipped cream over the ladyfingers in an even layer.
- Spoon half of the raspberry jam over the whipped cream, followed by half of the fresh raspberries.
- Repeat with another layer of dipped ladyfingers, whipped cream, jam, and raspberries.
- Finish with a final layer of dipped ladyfingers and top with the remaining whipped cream.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight until well chilled.
- Before serving, garnish with chocolate shavings on top.
