Salted Caramel Apple Pie

I baked a delightful Salted Caramel Apple Pie last weekend and it was a hit with my family. The warm, gooey caramel paired perfectly with the tender apples and flaky crust. Here's how you can make it too:

Ingredients:

For the Crust:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup cold unsalted butter, cubed
  • 6-8 tablespoons ice water
For the Filling:
  • 6-7 medium-sized apples, peeled, cored, and sliced
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
For the Salted Caramel:
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, room temperature, cut into pieces
  • 1/2 cup heavy cream
  • 1 teaspoon sea salt
Directions:
  1. Preheat the oven to 375°F (190°C).
  2. For the crust, mix flour, salt, and sugar in a large bowl. Add cubed butter and mix until it resembles coarse crumbs. Gradually add ice water and mix until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.
  3. Roll out one disc of dough on a lightly floured surface to fit a 9-inch pie dish. Place the dough in the dish and trim the edges.
  4. For the filling, mix sliced apples, sugar, flour, cinnamon, nutmeg, salt, and lemon juice in a large bowl. Pour the filling into the prepared pie crust.
  5. Roll out the second disc of dough and place it over the filling. Trim and crimp the edges to seal the pie. Cut slits in the top crust to vent.
  6. Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  7. While the pie is baking, make the salted caramel. Heat granulated sugar in a medium saucepan over medium heat, stirring constantly with a rubber spatula. Sugar will form clumps and eventually melt into a thick, amber-colored liquid.
  8. Once the sugar is completely melted, add the butter. Be careful, as the caramel will bubble rapidly. Stir the butter into the caramel until it is completely melted, about 2-3 minutes.
  9. Very slowly, drizzle in the heavy cream while stirring. Allow the mixture to boil for 1 minute. It will rise in the pan as it boils.
  10. Remove from heat and stir in the sea salt. Let the caramel cool slightly.
  11. When the pie is done baking, allow it to cool for at least 30 minutes. Drizzle the salted caramel over the pie before serving. Enjoy!
