Ingredients:​

For the Pie Crust:

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter (cold and cut into small pieces)
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/4 cup ice water (more if needed)
For the Apple Filling:

  • 6 cups apples (peeled, cored, and sliced, preferably a mix of tart and sweet apples like Granny Smith and Honeycrisp)
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/4 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 tbsp lemon juice
For the Caramel Sauce:

  • 1 cup granulated sugar
  • 6 tbsp unsalted butter (cut into pieces)
  • 1/2 cup heavy cream
  • 1/2 tsp sea salt (plus more for sprinkling)

Instructions:​

  1. Prepare the Pie Crust:
    • In a large bowl, mix the flour, sugar, and salt.
    • Add the cold butter pieces and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
    • Gradually add the ice water, stirring until the dough begins to come together. Add more water if necessary.
    • Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
  2. Make the Apple Filling:
    • In a large bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Toss to coat the apples evenly.
  3. Prepare the Caramel Sauce:
    • In a medium saucepan over medium heat, melt the granulated sugar, stirring constantly until it turns a golden brown color.
    • Carefully add the butter (it will bubble vigorously), stirring until melted and smooth.
    • Gradually stir in the heavy cream until combined. Remove from heat and stir in the sea salt. Let cool slightly.
  4. Assemble the Pie:
    • Preheat your oven to 375°F (190°C).
    • On a floured surface, roll out one of the dough discs to fit your pie dish. Place the dough in the dish, trimming any excess.
    • Spread a layer of caramel sauce over the bottom of the pie crust.
    • Pour the apple filling over the caramel layer.
    • Roll out the second dough disc and place it over the filling. Trim, tuck, and crimp the edges to seal. Cut a few slits in the top crust for steam to escape.
    • Brush the top crust with a little water and sprinkle with additional sea salt.
  5. Bake:
    • Bake the pie for 50-60 minutes, or until the crust is golden brown and the filling is bubbly.
    • Let the pie cool for at least 2 hours before serving to allow the filling to set.
  6. Serve:
    • Enjoy your Salted Caramel Apple Pie warm or at room temperature, with a scoop of vanilla ice cream if desired.
