Ingredients:

  • 1 lb (450g) fresh spinach leaves, washed and dried
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: a pinch of red pepper flakes for heat
  • Optional: lemon juice or balsamic vinegar for added flavor
Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to let it brown.
  3. Add the spinach leaves to the skillet. You may need to add them in batches depending on the size of your skillet. Toss gently with tongs or a spatula until the spinach begins to wilt.
  4. Continue cooking, tossing occasionally, until all the spinach is wilted and cooked down, about 2-3 minutes.
  5. Season with salt, pepper, and red pepper flakes if using. Taste and adjust seasoning as needed.
  6. Optional: Finish with a squeeze of lemon juice or a splash of balsamic vinegar for added brightness and flavor.
  7. Serve hot as a side dish or as a topping for pasta, rice, or grilled meats.
