    • 1 lb large shrimp, peeled and deveined
    • 1 cup buttermilk
    • 1 cup cornmeal
    • 1 cup all-purpose flour
    • 1 tsp paprika
    • 1 tsp garlic powder
    • 1/2 tsp cayenne pepper
    • Salt and pepper to taste
    • Vegetable oil for frying
  • For the sandwich:
    • 4 hoagie rolls or French bread
    • Lettuce, shredded
    • Tomato, sliced
    • Pickles, sliced
  • For the remoulade sauce:
    • 1/2 cup mayonnaise
    • 1 tbsp Dijon mustard
    • 1 tbsp pickle relish
    • 1 tsp hot sauce
    • 1 tsp lemon juice
    • 1 garlic clove, minced
    • Salt and pepper to taste
Instructions:
  1. Prepare the shrimp:
    • In a bowl, soak the shrimp in buttermilk for 15-20 minutes.
    • In another bowl, mix the cornmeal, flour, paprika, garlic powder, cayenne pepper, salt, and pepper.
  2. Fry the shrimp:
    • Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
    • Dredge the buttermilk-soaked shrimp in the flour mixture, coating evenly.
    • Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per side.
    • Remove and drain on paper towels.
  3. Make the remoulade sauce:
    • In a small bowl, mix together the mayonnaise, Dijon mustard, pickle relish, hot sauce, lemon juice, minced garlic, salt, and pepper.
  4. Assemble the Po' Boys:
    • Split the hoagie rolls or French bread lengthwise.
    • Spread a generous amount of remoulade sauce on each side of the bread.
    • Layer with shredded lettuce, tomato slices, and pickles.
    • Add the fried shrimp on top.
    • Close the sandwich and serve immediately.
