  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Applewood or hickory wood chips for smoking

Instructions:​

  1. Prepare the Pork Loin:
    • Pat the pork loin dry with paper towels.
    • Rub the olive oil all over the pork loin.
  2. Make the Spice Rub:
    • In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, black pepper, salt, thyme, and rosemary.
    • Rub the spice mixture evenly over the entire pork loin.
  3. Prepare the Smoker:
    • Preheat your smoker to 225°F (110°C).
    • Add applewood or hickory wood chips to the smoker box.
  4. Smoke the Pork Loin:
    • Place the pork loin on the smoker rack.
    • Smoke for about 2.5 to 3 hours, or until the internal temperature reaches 145°F (63°C).
  5. Rest and Serve:
    • Remove the pork loin from the smoker and let it rest for 10-15 minutes.
