Smoked ribs are a delicious treat that combines tender meat with rich, smoky flavors. Perfect for a backyard barbecue or a special weekend meal, this recipe will guide you through making mouthwatering smoked ribs that will impress your family and friends. Let’s get smoking! 🔥

Ingredients:​

  • 2 racks of pork ribs (baby back or spare ribs)
  • 2 tablespoons olive oil
  • Your favorite BBQ sauce (for basting)
  • Wood chips (hickory, apple, or cherry wood work well)

Dry Rub:​

  • 1/4 cup brown sugar
  • 2 tablespoons paprika
  • 1 tablespoon black pepper
  • 1 tablespoon salt
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper (optional for heat)

Instructions:​

  1. Prepare the Ribs:
    • Remove the membrane from the back of the ribs for better flavor penetration. Use a knife to loosen the edge of the membrane and then pull it off with a paper towel for grip.
  2. Apply the Dry Rub:
    • In a small bowl, combine all the dry rub ingredients.
    • Pat the ribs dry with paper towels. Rub olive oil over both sides of the ribs to help the seasoning stick.
    • Generously apply the dry rub mixture to both sides of the ribs, massaging it into the meat. Let the ribs sit for at least 30 minutes at room temperature, or refrigerate for up to 4 hours for more intense flavor.
  3. Prepare the Smoker:
    • Preheat your smoker to 225°F (110°C). Use a smoker or a charcoal grill set up for indirect smoking.
    • Soak the wood chips in water for about 30 minutes, then drain. Add the soaked wood chips to the smoker.
  4. Smoke the Ribs:
    • Place the ribs on the smoker grate, bone side down.
    • Close the smoker lid and smoke the ribs at 225°F (110°C) for about 3 hours.
  5. Wrap the Ribs:
    • After 3 hours, remove the ribs from the smoker and wrap them tightly in aluminum foil. Before sealing the foil, you can add a little apple juice or beer for extra moisture and flavor.
    • Return the wrapped ribs to the smoker and cook for another 2 hours.
  6. Baste and Finish:
    • After 2 hours, unwrap the ribs and discard the foil. Brush the ribs with your favorite BBQ sauce.
    • Place the ribs back on the smoker and cook for an additional 1 hour, basting with BBQ sauce every 20 minutes, until the ribs are tender and the sauce is caramelized.
  7. Rest and Serve:
    • Remove the ribs from the smoker and let them rest for about 10 minutes.
    • Slice the ribs between the bones and serve with additional BBQ sauce on the side.
