Hi guys, I wanna share this tasty Smoky Pork Posole recipe. It is a hearty and flavorful Mexican stew made with tender pork, hominy, and a variety of spices. This comforting dish is perfect for chilly nights or for feeding a crowd at gatherings.

Ingredients:
- 2 pounds boneless pork shoulder, trimmed and cut into 1-inch cubes
- Salt and pepper, to taste
- 2 tablespoons vegetable oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 1/2 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper (optional, for heat)
- 4 cups chicken broth
- 2 cans (15 ounces each) hominy, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 can (4 ounces) diced green chilies
- Juice of 1 lime
- Salt and pepper, to taste
- Optional toppings: chopped fresh cilantro, sliced radishes, diced avocado, lime wedges, shredded cabbage, crumbled queso fresco or cotija cheese, tortilla strips
- Season the pork cubes with salt and pepper to taste.
- Heat the vegetable oil in a large Dutch oven or stockpot over medium-high heat.
- Add the seasoned pork cubes to the pot in batches, making sure not to overcrowd the pan. Brown the pork cubes on all sides, then transfer them to a plate and set aside.
- In the same pot, add the diced onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, smoked paprika, dried oregano, chili powder, ground coriander, and cayenne pepper (if using) to the pot. Cook for an additional 1-2 minutes, or until the spices are fragrant.
- Return the browned pork cubes to the pot, along with any accumulated juices.
- Pour in the chicken broth, hominy, diced tomatoes (with their juices), and diced green chilies. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the Smoky Pork Posole simmer for 1.5 to 2 hours, or until the pork is tender and the flavors have melded together.
- Once the pork is tender, stir in the lime juice and season the Smoky Pork Posole with additional salt and pepper to taste.
- Serve the Smoky Pork Posole hot, garnished with your choice of toppings such as chopped fresh cilantro, sliced radishes, diced avocado, lime wedges, shredded cabbage, crumbled queso fresco or cotija cheese, and tortilla strips.
