Hey everyone! 👋 I just made a batch of homemade Sofrito, and it's amazing! 🌿🍅 It adds such an authentic flavor to everything. Once you try it, you'll be hooked!

  • 10 ají dulce peppers, tops removed
  • 4 onions, cut into large chunks
  • 3 medium tomatoes, chopped
  • 2 green bell peppers, seeded and chopped
  • 1 red bell pepper, seeded and chopped
  • 3 medium heads of garlic, peeled
  • 25 cilantro stems with leaves
  • 25 recao stems with leaves
  • 1 tablespoon salt
  • 1 tablespoon black pepper


  1. In a food processor, combine the ají dulce peppers, onions, tomatoes, green bell peppers, red bell pepper, and garlic. Pulse a few times until the mixture is roughly chopped.
  2. Add the cilantro stems, recao stems, salt, and black pepper to the mixture. Process until you achieve a semi-chunky salsa consistency, ensuring it is not too watery.
  3. Transfer the sofrito to a resealable plastic freezer bag. Store in the refrigerator for immediate use or freeze in portions for future use.
