Sofrito Recipe
Ingredients
- 10 ají dulce peppers, tops removed
- 4 onions, cut into large chunks
- 3 medium tomatoes, chopped
- 2 green bell peppers, seeded and chopped
- 1 red bell pepper, seeded and chopped
- 3 medium heads of garlic, peeled
- 25 cilantro stems with leaves
- 25 recao stems with leaves
- 1 tablespoon salt
- 1 tablespoon black pepper
Directions
- In a food processor, combine the ají dulce peppers, onions, tomatoes, green bell peppers, red bell pepper, and garlic. Pulse a few times until the mixture is roughly chopped.
- Add the cilantro stems, recao stems, salt, and black pepper to the mixture. Process until you achieve a semi-chunky salsa consistency, ensuring it is not too watery.
- Transfer the sofrito to a resealable plastic freezer bag. Store in the refrigerator for immediate use or freeze in portions for future use.
