Here's what you'll need:
- 4 cups seedless watermelon, roughly chopped
- 1 medium cucumber, peeled and roughly chopped
- 1 red bell pepper, seeded and roughly chopped
- 1 jalapeño pepper, seeded and roughly chopped (adjust to your spice preference)
- 1/2 red onion, chopped
- 1 clove garlic, minced
- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- 1/4 cup chopped fresh mint
- Salt and freshly ground black pepper, to taste
- 1/2 cup crumbled feta cheese, for garnish
- Fresh mint sprigs, for garnish
- In a blender, combine the watermelon, cucumber, bell pepper, jalapeño, red onion, garlic, lime juice, and olive oil. Blend until smooth.
- Season with salt and pepper to taste.
- Cover and refrigerate for at least 2 hours, or until chilled.
- To serve, ladle the gazpacho into bowls. Garnish with crumbled feta cheese and fresh mint sprigs.
