Ingredients:​

  • 2 cups grated butternut squash
  • 1/4 cup all-purpose flour (or gluten-free if preferred)
  • 1 egg
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh sage, finely chopped
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • Olive oil for frying
  • Sour cream or yogurt for serving

Instructions:​

  1. In a large bowl, combine grated squash, flour, egg, Parmesan, sage, garlic, salt, and pepper. Mix until everything is well combined.
  2. Heat olive oil in a skillet over medium heat. Scoop about 2 tablespoons of the mixture, form it into small patties, and gently place in the pan.
  3. Cook each fritter for 3-4 minutes on each side, until golden and crispy. Repeat until all the mixture is used.
  4. Serve the fritters warm with a dollop of sour cream or yogurt for dipping. 🥣
