Ingredients:
- 2 cups grated butternut squash
- 1/4 cup all-purpose flour (or gluten-free if preferred)
- 1 egg
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh sage, finely chopped
- 1 garlic clove, minced
- Salt and pepper to taste
- Olive oil for frying
- Sour cream or yogurt for serving
Instructions:
- In a large bowl, combine grated squash, flour, egg, Parmesan, sage, garlic, salt, and pepper. Mix until everything is well combined.
- Heat olive oil in a skillet over medium heat. Scoop about 2 tablespoons of the mixture, form it into small patties, and gently place in the pan.
- Cook each fritter for 3-4 minutes on each side, until golden and crispy. Repeat until all the mixture is used.
- Serve the fritters warm with a dollop of sour cream or yogurt for dipping.
