Ingredients:
- 2 medium zucchinis, grated
- 1/2 teaspoon salt
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg, beaten
- 2 tablespoons chopped fresh herbs (such as parsley or dill)
- 1 clove garlic, minced
- Salt and pepper to taste
- Olive oil for frying
- Start by grating the zucchinis using a box grater or food processor. Place the grated zucchini in a colander and sprinkle with salt. Let it sit for about 10 minutes to draw out excess moisture, then squeeze out the liquid using a clean kitchen towel or paper towels.
- In a large mixing bowl, combine the grated zucchini, flour, Parmesan cheese, beaten egg, chopped herbs, minced garlic, salt, and pepper. Mix until well combined.
- Heat a thin layer of olive oil in a large skillet over medium heat.
- Once the oil is hot, scoop about 1/4 cup of the zucchini mixture into the skillet, using a spoon to flatten it into a fritter shape.
- Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy.
- Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil.
- Repeat the process with the remaining zucchini mixture, adding more olive oil to the skillet as needed.
- Serve the zucchini fritters hot, garnished with a dollop of Greek yogurt or sour cream if desired.
