For the Steak:

  • 2 (8-ounce) beef steaks (such as ribeye, sirloin, or New York strip)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Fresh herbs (such as thyme or rosemary), for garnish (optional)
For the Potatoes:

  • 4 large potatoes (such as russet or Yukon gold), scrubbed and diced into cubes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)
Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Place the diced potatoes on a large baking sheet. Drizzle with olive oil and sprinkle with minced garlic, dried thyme, dried rosemary, salt, and black pepper. Toss the potatoes until evenly coated in the seasonings.
  3. Spread the seasoned potatoes out in a single layer on the baking sheet. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender, flipping halfway through the cooking time for even browning.
  4. While the potatoes are roasting, prepare the steak. Pat the steaks dry with paper towels, then season both sides generously with salt and black pepper.
  5. Heat a large skillet or grill pan over medium-high heat. Add the olive oil to the skillet.
  6. Once the skillet is hot, add the seasoned steaks. Cook for 3-4 minutes on each side for medium-rare, or adjust the cooking time according to your desired level of doneness.
  7. During the last minute of cooking, add the minced garlic and butter to the skillet. Baste the steaks with the melted butter and garlic mixture, spooning it over the steaks as they cook.
  8. Once the steaks are cooked to your liking, transfer them to a cutting board and let them rest for a few minutes before slicing.
  9. To serve, slice the steaks against the grain into thin strips. Divide the roasted potatoes among plates and top with the sliced steak.
  10. Garnish the steak and potatoes with fresh herbs, such as thyme or rosemary, and chopped parsley if desired.
