Steak with Blue Cheese Butter
Ingredients:
- 2 New York strip steaks (about 1 inch thick)
- 2 tbsp olive oil
- Salt and pepper, to taste
- 4 tbsp unsalted butter, softened
- 1/4 cup blue cheese, crumbled
- 1 garlic clove, minced
- 1 tbsp fresh chives, chopped
Instructions:
- Prepare the Blue Cheese Butter: In a small bowl, combine the softened butter, crumbled blue cheese, minced garlic, and chopped chives. Mix well until smooth and creamy. Set aside.
- Season the Steaks: Generously season both sides of the steaks with salt and pepper.
- Sear the Steaks: In a large skillet, heat olive oil over medium-high heat. Add the steaks and sear for 3-4 minutes per side, depending on your preferred level of doneness. The key is to get a nice crust on the outside while keeping the inside juicy!
- Rest and Top with Butter: Once cooked, remove the steaks from the skillet and let them rest for 5 minutes. While the steaks are resting, top each with a dollop of the blue cheese butter, letting it melt into the warm steak.
