Pineapple and chicken, such a hit!

- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 1/4 cup water
- 1 cup pineapple chunks (fresh or canned)
- Season the chicken breasts with salt and pepper on both sides.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the pineapple juice, soy sauce, honey, and minced garlic. Stir to combine and bring to a simmer.
- In a small bowl, mix the cornstarch and water until smooth. Add the cornstarch mixture to the skillet and stir until the sauce thickens, about 2-3 minutes.
- Return the chicken to the skillet and add the pineapple chunks. Cook for another 2-3 minutes, stirring occasionally, until the chicken is coated in the sauce and the pineapple is heated through.
- Serve the sticky chicken pineapple over rice or noodles, and enjoy!
