Ingredients:

  • 3/4 cup packed light brown sugar
  • 1/4 cup smoked paprika
  • 2 tablespoons cayenne pepper
  • 2 tablespoons garlic powder
  • 3 tablespoons kosher salt, plus more
  • 2 St. Louis-style pork ribs (3–4 pounds each)
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup apple cider vinegar
  • Vegetable oil
Preparation:

  1. Preheat your oven to 325°F. In a small bowl, mix together the brown sugar, smoked paprika, cayenne pepper, garlic powder, and 3 tablespoons of kosher salt. Set aside 1/4 cup of this spice mixture.
  2. Pat the ribs dry with paper towels, then rub them all over with the remaining spice mixture, ensuring it gets into all the nooks and crannies. Wrap each rack tightly in a double layer of foil, sealing the edges securely. Place each foil packet on a rimmed baking sheet and bake for 2 to 3 hours, until the meat is fork-tender but not falling off the bone. Let them cool.
  3. Tear open a corner of each foil packet and carefully pour the juices from the ribs into a large heatproof measuring cup. Allow the juices to settle, then spoon off the fat from the surface and discard it.
  4. In a medium saucepan over medium heat, melt the butter, stirring often, until it foams and browns slightly (be careful not to burn it), which should take around 5 to 8 minutes. Add the juices from the ribs and 1/4 cup of the reserved spice mixture. Bring the mixture to a simmer and cook until it's reduced by about one-third, approximately 15 to 20 minutes. Remove the sauce from the heat, add the apple cider vinegar, and season with salt to taste.
  5. Preheat your grill to medium-high heat and oil the grate. Remove the ribs from the foil and grill them, basting with the sauce and turning occasionally, until they're charred in spots, which usually takes 5 to 7 minutes. Transfer the ribs to a cutting board and let them rest for 10 minutes. Slice between the ribs and serve with the remaining sauce.
Do Ahead:

  • You can bake the ribs up to 1 day ahead; let them cool in the foil, then chill them. Bring them to room temperature before grilling. The sauce can also be made 1 day ahead; simply cover and chill it, then reheat it over low heat before serving. Enjoy your delicious Sweet-and-Spicy Ribs!
