Sweet Cucumber Relish Recipe:
Ingredients:
- 4 cups finely chopped cucumbers (peeled and seeded)
- 1 cup finely chopped onions
- 1 cup finely chopped red bell peppers
- 1/4 cup kosher salt
- 2 cups white vinegar
- 1 1/2 cups granulated sugar
- 1 tablespoon mustard seeds
- 1 teaspoon celery seeds
- 1/2 teaspoon turmeric
- In a large bowl, combine the chopped cucumbers, onions, and red bell peppers. Sprinkle with the kosher salt and mix well. Let sit for 2 hours.
- After 2 hours, drain the mixture and rinse well under cold water. Drain again, pressing out any excess water.
- In a large pot, combine the white vinegar, granulated sugar, mustard seeds, celery seeds, and turmeric. Bring to a boil over medium heat, stirring to dissolve the sugar.
- Add the drained vegetable mixture to the pot. Return to a boil, then reduce heat and simmer for 10 minutes.
- Remove from heat and ladle the relish into sterilized jars, leaving 1/2-inch headspace. Seal the jars and process in a boiling water bath for 10 minutes.
- Let the jars cool completely. Store in a cool, dark place for at least 1 week to allow the flavors to develop.
- Enjoy your sweet cucumber relish on burgers, hot dogs, sandwiches, or as a flavorful addition to your favorite dishes!
