- 1 1/2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
- 1/2 cup granulated sugar
- 1/4 cup packed brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup chopped nuts or raisins (optional)
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease.
- Prepare the Wet Ingredients:
