Ingredients:


  • 2 tablespoons light brown sugar
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • Kosher salt and freshly ground black pepper
  • 1/4 cup panko breadcrumbs
  • 1/2 cup chopped parsley leaves
  • 2 tablespoons unsalted butter, melted
  • 1 1/2 pounds skin-on salmon fillet, preferably center-cut
  • 1 tablespoon Dijon mustard
Directions:

  1. Preheat your oven to 425 degrees F and line a baking sheet with foil for easy cleanup.
  2. In a small bowl, mix together the brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon of kosher salt, and a good amount of freshly ground black pepper.
  3. In another small bowl, combine the panko breadcrumbs with chopped parsley, melted butter, 1/4 teaspoon of kosher salt, and a few grinds of black pepper.
  4. Place the salmon fillet skin-side down on the prepared baking sheet. Spread the surface of the salmon with the Dijon mustard.
  5. Press the brown sugar mixture evenly over the salmon, then sprinkle the breadcrumb mixture on top.
  6. To prevent juices from spreading and burning, create a border around the salmon by crimping the foil.
  7. Bake in the preheated oven until the breadcrumbs are golden brown and the salmon is firm yet flakes easily when pressed, about 15 to 18 minutes.
  8. Once done, cut the baked salmon into four equal portions for serving.
