- 2 tablespoons light brown sugar
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- Kosher salt and freshly ground black pepper
- 1/4 cup panko breadcrumbs
- 1/2 cup chopped parsley leaves
- 2 tablespoons unsalted butter, melted
- 1 1/2 pounds skin-on salmon fillet, preferably center-cut
- 1 tablespoon Dijon mustard
- Preheat your oven to 425 degrees F and line a baking sheet with foil for easy cleanup.
- In a small bowl, mix together the brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon of kosher salt, and a good amount of freshly ground black pepper.
- In another small bowl, combine the panko breadcrumbs with chopped parsley, melted butter, 1/4 teaspoon of kosher salt, and a few grinds of black pepper.
- Place the salmon fillet skin-side down on the prepared baking sheet. Spread the surface of the salmon with the Dijon mustard.
- Press the brown sugar mixture evenly over the salmon, then sprinkle the breadcrumb mixture on top.
- To prevent juices from spreading and burning, create a border around the salmon by crimping the foil.
- Bake in the preheated oven until the breadcrumbs are golden brown and the salmon is firm yet flakes easily when pressed, about 15 to 18 minutes.
