Ingredients​

  • Base:
    • 1 cup tiger nuts (finely ground, or you can use tiger nut flour)
    • 1/2 cup rolled oats
    • 1/4 cup sunflower seed butter (or any nut-free butter)
    • 1/4 cup honey or maple syrup
    • 1/2 teaspoon vanilla extract
  • Mix-Ins:
    • 1/4 cup mini chocolate chips or dark chocolate chips (optional)
    • 1/4 cup dried fruit (like raisins, cranberries, or chopped apricots)
    • 1 tablespoon chia seeds or flaxseeds (optional)
    • A pinch of salt

Instructions​

  1. Combine Ingredients: In a large mixing bowl, combine the ground tiger nuts, rolled oats, sunflower seed butter, honey or maple syrup, vanilla extract, and salt. Mix until well combined.
  2. Add Mix-Ins: Stir in the mini chocolate chips, dried fruit, and seeds if using. Make sure everything is evenly distributed.
  3. Form Bites: Scoop out small portions of the mixture and roll them into balls (about 1 inch in diameter).
  4. Chill: Place the energy bites on a parchment-lined baking sheet or a plate and refrigerate for about 30 minutes to firm up.
  5. Store: Once firm, transfer the bites to an airtight container. They can be stored in the fridge for up to a week or in the freezer for longer.

Tips​

  • You can adjust the sweetness by adding more or less honey/maple syrup.
  • Feel free to customize the mix-ins based on your preferences!
