  • 1 small head garlic
  • 2 tablespoons oil (canola or grapeseed), plus extra for drizzling
  • 4 tablespoons (1/2 stick) unsalted butter
  • 4 large sprigs fresh thyme
Instructions:

  1. Prepare the Steak:
    • Preheat the oven to 350°F (175°C).
    • Pat the tomahawk steak dry with paper towels.
    • Season generously with kosher salt and freshly ground pepper. Allow the steak to come to room temperature.
  2. Roast the Garlic:
    • Trim off the top 1/4 inch of the garlic bulb. Drizzle with oil, sprinkle with salt, and wrap in foil.

  3. Sear the Steak:
    • In a large cast-iron skillet, heat 2 tablespoons of oil over medium-high heat until smoking.
    • Carefully place the steak in the skillet and sear without moving it for 3 minutes. Turn using tongs, using the bone as a handle, and sear for another 3 minutes. Sear the side opposite the bone for about 1 minute.
    • Transfer the steak to a rimmed baking sheet and roast in the oven for 9-10 minutes, or until desired doneness (125°F for rare, 135°F for medium-rare, 145°F for medium). Use an instant-read thermometer to check doneness.
  4. Prepare the Butter Sauce:
    • While the steak is roasting, melt the butter in the skillet over low heat.
    • Squeeze the roasted garlic cloves into the butter, stir to combine, and add the thyme sprigs. Cook for about 2 minutes, allowing flavors to meld.
  5. Finish and Serve:
    • Once the steak reaches desired doneness, remove from the oven and return to the skillet with the garlic butter.
    • Use a spoon to baste the steak with the garlic butter for about 1 minute.
    • Transfer the steak to a cutting board, tent loosely with foil, and let rest for 10 minutes.
    • Remove optional foil and paper towel wrapping from the bone if used.
    • Slice the steak against the grain and drizzle with additional garlic butter.
