- 8 ounces king oyster mushrooms
- 1 1/4 cups vital wheat gluten
- 1/3 cup chickpea flour
- 1/4 cup nutritional yeast
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground fennel (optional)
- Kosher salt and freshly ground black pepper
- 2 tablespoons olive oil, plus more for the grill grates
- 1 tablespoon soy sauce
- 2 cups ketchup
- 1/2 cup cider vinegar
- 1/4 cup molasses
- 1/4 cup packed vegan light brown sugar
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Kosher salt and freshly ground black pepper
- For the mushroom ribs: Shred the king oyster mushrooms into long, thin strands. Cut into 1-inch-long segments. Set aside.
- In a large bowl, whisk together vital wheat gluten, chickpea flour, nutritional yeast, chili powder, garlic powder, onion powder, optional ground fennel, salt, and pepper. Add shredded mushrooms and toss until coated.
- In a separate bowl, whisk together olive oil, soy sauce, and water. Pour into the mushroom mixture and stir until combined. Shape into a rectangle, then cut into 2 slabs. Let rest for 15 minutes.
- Preheat oven to 350°F.
- For the barbecue sauce: In a medium saucepan, combine ketchup, cider vinegar, molasses, brown sugar, chili powder, garlic powder, onion powder, smoked paprika, salt, pepper, and water. Bring to a boil, then simmer until thickened.
- Remove 1/2 cup of sauce and mix with water in a baking dish. Add mushroom slabs, cover with foil, and braise in the oven for 1 hour.
- Prepare a grill for medium heat. Brush mushroom slabs with barbecue sauce and grill for 3-4 minutes per side.
- Brush with more barbecue sauce, cut into ribs, and serve with extra sauce on the side.
