Vegan BBQ Mushroom Ribs

Ingredients:

Mushroom Ribs:


  • 8 ounces king oyster mushrooms
  • 1 1/4 cups vital wheat gluten
  • 1/3 cup chickpea flour
  • 1/4 cup nutritional yeast
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground fennel (optional)
  • Kosher salt and freshly ground black pepper
  • 2 tablespoons olive oil, plus more for the grill grates
  • 1 tablespoon soy sauce
Barbecue Sauce:

  • 2 cups ketchup
  • 1/2 cup cider vinegar
  • 1/4 cup molasses
  • 1/4 cup packed vegan light brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Kosher salt and freshly ground black pepper
Directions:

  1. For the mushroom ribs: Shred the king oyster mushrooms into long, thin strands. Cut into 1-inch-long segments. Set aside.
  2. In a large bowl, whisk together vital wheat gluten, chickpea flour, nutritional yeast, chili powder, garlic powder, onion powder, optional ground fennel, salt, and pepper. Add shredded mushrooms and toss until coated.
  3. In a separate bowl, whisk together olive oil, soy sauce, and water. Pour into the mushroom mixture and stir until combined. Shape into a rectangle, then cut into 2 slabs. Let rest for 15 minutes.
  4. Preheat oven to 350°F.
  5. For the barbecue sauce: In a medium saucepan, combine ketchup, cider vinegar, molasses, brown sugar, chili powder, garlic powder, onion powder, smoked paprika, salt, pepper, and water. Bring to a boil, then simmer until thickened.
  6. Remove 1/2 cup of sauce and mix with water in a baking dish. Add mushroom slabs, cover with foil, and braise in the oven for 1 hour.
  7. Prepare a grill for medium heat. Brush mushroom slabs with barbecue sauce and grill for 3-4 minutes per side.
  8. Brush with more barbecue sauce, cut into ribs, and serve with extra sauce on the side.
