Instructions:​

  1. Mix Dry Ingredients: In a large bowl, whisk together the whole wheat flour, oats, brown sugar, baking powder, and salt.
  2. Combine Wet Ingredients: In another bowl, whisk together the milk, egg, melted butter (or oil), and vanilla extract.
  3. Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. It’s okay if the batter is a bit lumpy. Let it rest for about 5 minutes to thicken up.
  4. Preheat Pan: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
  5. Cook Pancakes: Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges start to look set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown.
  6. Serve: Serve these pancakes warm with your favorite toppings—fresh fruit, yogurt, or a drizzle of maple syrup works wonders!
