For the Dough:
  • 2 1/4 teaspoons active dry yeast (1 packet)

  • 1 tablespoon honey or sugar
  • 2 1/2 cups whole wheat flour
  • 1 teaspoon salt
  • 2 tablespoons olive oil
For the Filling:
  • 1 cup shredded mozzarella cheese
  • 1/2 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 small zucchini, diced
  • 1 small bell pepper, diced
  • 1/2 cup mushrooms, diced
  • 1/2 cup baby spinach leaves, chopped
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper, to taste
  • 1 egg, beaten (for egg wash)
  • Marinara sauce, for dipping

Instructions​

  1. Prepare the Dough:
    • In a small bowl, combine the warm water, yeast, and honey or sugar. Let it sit for 5-10 minutes until frothy.
    • In a large bowl, mix the whole wheat flour and salt. Add the yeast mixture and olive oil, and stir until a dough forms.
    • Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover with a clean towel, and let it rise in a warm place for 1-2 hours, or until doubled in size.
  2. Prepare the Filling:
    • In a large bowl, combine the mozzarella, ricotta, and Parmesan cheeses.
    • Add the diced zucchini, bell pepper, mushrooms, and chopped spinach. Season with oregano, basil, salt, and pepper. Mix until well combined.
  3. Preheat Oven:
    • Preheat your oven to 425°F (220°C).
    • Line a baking sheet with parchment paper.
  4. Assemble the Calzones:
    • Punch down the dough and divide it into 4 equal portions. Roll each portion into a circle on a floured surface.
    • Spoon a portion of the cheese and veggie filling onto one half of each dough circle, leaving a border around the edges.
    • Fold the dough over the filling to create a half-moon shape. Press the edges together to seal, and crimp with a fork to ensure they’re well sealed.
    • Place the calzones on the prepared baking sheet.
  5. Bake the Calzones:
    • Brush the tops of the calzones with the beaten egg for a golden finish.
    • Bake for 15-20 minutes, or until the calzones are golden brown and the filling is melted and bubbly.
  6. Cool and Serve:
    • Let the calzones cool for a few minutes before serving.
    • Serve with warm marinara sauce for dipping.
