Why is my pumpkin pie still jiggly?

Help! I'm in a bit of a pickle with my pumpkin pie. Despite following recipes to the letter, its center wobbles like jelly every time. Oven temperature checks out, timing seems right, but still, this issue persists. Could overmixing or maybe underbaking be culprits here? Would love any insights or fixes you've discovered.
