I made this peach melba for dessert the other night, and it’s such a delicious classic! The combo of peaches, raspberries, and ice cream is just perfect.

Yummy Peach Melba Recipe​

Ingredients:

  • 4 ripe peaches, peeled and halved
  • 1 cup fresh raspberries
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • Vanilla ice cream
  • Fresh mint for garnish (optional)
Instructions:

  1. In a small saucepan, combine the raspberries, sugar, and lemon juice. Cook over medium heat until the raspberries break down and the sauce thickens (about 5 minutes). Set aside to cool.
  2. Poach the peach halves in simmering water for about 2-3 minutes, until tender but not mushy. Remove and let cool.
  3. To serve, place two peach halves in a bowl, add a scoop of vanilla ice cream, and drizzle with the raspberry sauce.
  4. Garnish with fresh mint if desired.
