I made this peach melba for dessert the other night, and it’s such a delicious classic! The combo of peaches, raspberries, and ice cream is just perfect.

Yummy Peach Melba Recipe
Ingredients:- 4 ripe peaches, peeled and halved
- 1 cup fresh raspberries
- 1/4 cup sugar
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- Vanilla ice cream
- Fresh mint for garnish (optional)
- In a small saucepan, combine the raspberries, sugar, and lemon juice. Cook over medium heat until the raspberries break down and the sauce thickens (about 5 minutes). Set aside to cool.
- Poach the peach halves in simmering water for about 2-3 minutes, until tender but not mushy. Remove and let cool.
- To serve, place two peach halves in a bowl, add a scoop of vanilla ice cream, and drizzle with the raspberry sauce.
- Garnish with fresh mint if desired.
